Avocado Pasta

This past week, Aldi has had avocados on sale for $0.49 each! I love avocados but the thought of spending a dollar (or sometimes more) on one piece of fruit just doesn’t sit well with me. Not to mention, I have a hard time timing the eating of them right. I know that you are supposed to buy them when they are somewhat tender but, I swear, whether I buy them hard as a rock, squishy, or somewhere in between, at least half of it is bad when I open it. So, half of my dollar goes to waste. I have learned now, though, that Aldi is really the only place you should buy avocados. Not only are they half the price of other chain grocers, they are not half disgusting when you peel them. (more…)

Honey Barbecue Chicken with Homemade BBQ sauce

I’ve been craving barbecue sauce for quite some time. Typically, I keep some on hand. Barbecue cravings are few and far between for me, typically occurring in the summer. When I reached for my supply, however, I was shocked to see that it had expired in 2013. I suppose those cravings are a little farther between than I thought. (more…)

Black Bean Ranch Burgers

Not a huge fan of meat (not to mention it’s expensive!), I am forever on the search for new meatless recipes that provide a good protein punch. So, I’ve been experimenting with different types of meatless “burgers.” The great thing about meatless burgers is that the ingredients tend to come in packages that last quite awhile. I was able to experiment with lentils for a couple of batches and came up with a standard lentil burger and an Asian¬†lentil burger, both of which were delicious and wallet-friendly. So, after the success with the lentils, I decided it was a good time to experiment with black beans. (more…)

What to Do with All That Leftover Turkey

This summer, I explored the joys of turkey making. I was nervous, I was dubious, but in the end, it turned out great! There were steps along the way that were not so great: cutting the weird bits of plastic out of it, removing the sack of insides (yuck!), and just touching it in general. But, grossness aside, the process was pretty painless and it left A LOT of turkey to deal with. It was great preparation for the upcoming holiday that we are about to experience. Thanksgiving!
