As moms, we know that dinner sometimes needs to be quick. Between work and activities with the kids, we don’t have enough hours in the day to make an involved meal every single night. One of the go-tos in our house is homemade pizza. It’s definitely fast, but some nights it’s not fast enough. We need something else to use as a pizza crust. (more…)

Mom’s Extra Special Peanut Butter Treats

If I had to describe my diet growing up, I would say that it consisted of beef ramen noodles, Kraft Macaroni and Cheese, and Dr. Pepper. I cross my fingers every day that that mixture of nutrition doesn’t come back to bite me. It was my diet of choice. I like to look back and fantasize that my poor mother just didn’t cook any meals and I had to do what I had to do. That, of course, isn’t true, but the fantasizing has done a number on my memory. When I look back at my childhood, I can remember my mom cooking two things: Grammy’s Mac and Cheese and her extra special peanut butter treats. Palak Paneer with Masala Roasted Cauliflower

Prior to my move to Indiana, I had never had Indian food. It wasn’t that the other places that I lived didn’t offer this option, I just didn’t really know what it was. If you don’t know what something is, it’s hard to make the choice to try it. Lesley loves Indian food and has forced me, I mean, invited me to join her at two different Indian restaurants in town. Avocado Pasta

This past week, Aldi has had avocados on sale for $0.49 each! I love avocados but the thought of spending a dollar (or sometimes more) on one piece of fruit just doesn’t sit well with me. Not to mention, I have a hard time timing the eating of them right. I know that you are supposed to buy them when they are somewhat tender but, I swear, whether I buy them hard as a rock, squishy, or somewhere in between, at least half of it is bad when I open it. So, half of my dollar goes to waste. I have learned now, though, that Aldi is really the only place you should buy avocados. Not only are they half the price of other chain grocers, they are not half disgusting when you peel them. (more…)
