S’mores Pie

There is nothing more quintessentially summer than s’mores. They are the perfect pair to the end of a camping day, lake day, or just a backyard BBQ. Although we were home all summer with nothing much to do our consumption of s’mores this year was way down. Riley, my traditionalist, took note. In response, and after a discussion of pies she had been making with her Grandpa, I promised her we would make a s’mores pie together to celebrate the end of summer.

That end of summer was supposed to come this Thursday with their first day at an online public charter school. Lesley and I chose this charter school for the first semester of school to ensure that the girls were getting what they needed. Determined to follow tradition, the girls got dressed in their first day of school outfits and we took pictures on the front porch. Then, we went inside, set up the computers and logged in for their first day.

My intent was to help them navigate to their first lessons and be available for questions as they self-directed themselves through it and began to make a learning routine. I was a bit surprised that their teachers hadn’t planned any live sessions for the first day or the second day. Shouldn’t they be building a relationship with them? My pondering didn’t last too long before the constant flow of “mom, I need help,” came from both directions in the hallway. After an hour of back and forth between the girls rooms trying to help them I finally broke down in tears. Maddie, my loving daughter, just turned to me and said, “Well, first day was a fail.”

She wasn’t wrong. After a call from Maddie’s teacher where she explained that I was to be the teacher and she was like a teacher’s aide, and conferring with both my mom and Lesley, I promptly un-enrolled them and resigned, picked up their packets from their home school.

The fail behind us, Riley reminded me that we needed to make the s’mores pie before the next school started. So, to celebrate the second end to summer we set out to make the pie this weekend. My helper, though, disappeared to play Roblox with her friend before all the ingredients were even gathered. It’s hard to blame her when she hasn’t seen her friend in 5 months.

Though a lone baker in this experience, I must say, the pie turned out really well and even though we didn’t make it together, gathering around the table to enjoy it was just as good.

S’mores Pie


Chocolate Layer:

  • 2 oz dark chocolate
  • 3 oz semi sweet chocolate
  • 1/2 cup heavy cream
  • 1/2 cup marshmallow fluff/creme
  • 1/4 cup whole milk

Marshmallow layer:

  • 1 1/2 cup cool whip
  • 1 cup marshmallow fluff/creme


  • 1 graham cracker crust


  • In a saucepan, melt both the dark and semi-sweet chocolates. Stir chocolates constantly to avoid burning it.
  • Once completely melted, whisk in the whole milk.
  • Transfer mixture to a mixing bowl and mix in the marshmallow creme.
  • Pour into pie crust, cover, and refrigerate for 3-4 hours.
  • Once chocolate layer is set, make the marshmallow topping.
  • In a stand mixer, combine the cool whip and marshmallow creme.
  • Top the pie with the marshmallow mixture and refrigerate for at least 30 minutes. After, your pie is ready to serve!
