Lobster Mac and Cheese

I have a new love. No, it’s not lobster mac and cheese. That is a very old love of mine. My new love is Prime Photos. This service is available to all Amazon Prime members, and I recently discovered its glorious benefits. First, it automatically uploads all of my pictures and videos from my phone, and the space is unlimited! I have never been great about backing up my photos, and now I can rest assured that they are safe. Second, it sends me a super fun notification showing me the pictures and videos that I took the same day last year.




And that is how I was reminded of my lobster mac and cheese. This time last year, I was going through a serious lobster phase. My dad had made a particularly great lobster bisque, and I tried out lobster ravioli. I was hooked and couldn’t get enough. So, I made my own lobster mac and cheese. I studied a few recipes and gave it a shot. Luckily, it turned out and was so good! What wasn’t good was my intention to blog about it — clearly an intention that needed a reminder from Prime Photos. So here it is! Only one year later. Unfortunately, now I think my lobster cravings are also back.

Instructions

  1. Melt the butter in a medium saucepan.
  2. Add in the flour a little at a time using a whisk to quickly stir and combine it with the butter.
  3. Once all of the flour is mixed, stir in the milk slowly with the whisk.
  4. Cut cheese into small cubes. Add to the milk mixture a few at a time, allowing the cheese to melt thoroughly.
  5. Add in white wine, mustard, and basil. Mix thoroughly.
  6. Steam the lobster until thoroughly cooked. Chop into pieces.
  7. Add lobster to the cheese sauce.
  8. Add the elbow noodles.
  9. Pour the lobster mac and cheese into a small casserole. Bake at 350 degrees for 20-30 minutes.
