May was busy. Very busy. This one month held Riley’s preschool graduation, Maddie’s third birthday, a full weekend work event, and a family vacation. Phew. Not to mention it was the first full month of good weather and my parents’ newly built lake house. We didn’t slow down for much. The whole month seemed to take only a week to go by. As we got around to our June dinner at Lesley’s house last night, I was a bit surprised to realize that I hadn’t posted our May dinner yet!
It took me a while to even remember the night of our dinner, but I am glad the need to write this post gave me a minute to think back on it. It was a great night! We celebrated Maddie’s third birthday with a big cookie cake from Kroger that was delicious. Her third birthday was a day that Maddie was very much looking forward to. You see, Riley has been busy with a lot of activities that Maddie has not been able to do since she was too little, like swim classes. Now that she was three, she could be involved. And though her birthday has come and gone, she has diligently reminded both myself and my mom that she is old enough for swim classes. Luckily for us, she starts Monday.
Other than the birthday celebration, we enjoyed a grilled cod that allowed me to use a grill basket for the very first time. It was a lot of fun, and I can now confidently add fish to my list of things to grill. I took a chance and also grilled the asparagus and cherry tomatoes for the orzo. Delicious! You gotta love summer.
- 1/2 cup butter
- 6 cloves garlic
- 1 tbsp lemon juice
- 1 tsp crushed red pepper
- 1/2 tsp pepper
- 1/4 tsp salt
- 1/2 tsp paprika
- 2 cod filets
- Start the grill. I always prefer charcoal.
- Cut garlic into thin slivers.
- Melt butter in saucepan. Add crushed red pepper and lemon juice and cook for 2 minutes.
- Sprinkle cod on both sides with pepper, salt and paprika.
- Spray grill basket with nonstick spray for grilling.
- Grill cod until it reaches an internal temperature of 145 degrees and pulls apart easily.
- Top the cod with the garlic lemon butter and serve.
