What to Do with All That Leftover Turkey

This summer, I explored the joys of turkey making. I was nervous, I was dubious, but in the end, it turned out great! There were steps along the way that were not so great: cutting the weird bits of plastic out of it, removing the sack of insides (yuck!), and just touching it in general. But, grossness aside, the process was pretty painless and it left A LOT of turkey to deal with. It was great preparation for the upcoming holiday that we are about to experience. Thanksgiving! Turkey Noodle Casserole

This dish is brought to you by Creole Contessa. It calls for ground turkey, but shredded leftover turkey would be an easy substitute. The best thing this about this one – cheese. Or, maybe noodles. Both attract my kids, which means both shall be eaten. It does require an hour, so this one is probably best for the weekend after Thanksgiving. Find the recipe here: Turkey Noodle Casserole.

Turkey Enchiladas

Just like the Black Bean Turkey Quesadillas, these enchiladas are ready to go in no time and are packed with flavor. This recipe is from one of my favorite food bloggers, Creme de la Crumb. Since these use a lot of the same ingredients that the quesadillas use, you can eat both in the same week and really save on the grocery bill. Turkey Tetrazzini

Tetrazzini is just fun to say, so it has to be fun to eat, right? This leftover turkey dish is going to take a little bit more prep work, but as Recipe Girl, the author of the recipe points out, you can make this dish ahead of time and just throw it in the oven.
